Carlos is man of many talents and interests; mainly cheese and politics with an international flair. Carlos has extensive cheese résumé. He has trained with Sheridan’s Cheesemongers in Galway, Ireland; conducted an affineur apprenticeship with Murray’s Cheese in New York and regularly lectures on the Cheese Politics and History in New York City. Carlos has been selected as one of the international judges for the 2009 World Cheese Awards in the Canary Islands this fall. When not lecturing about, judging or eating cheese, he keeps himself busy developing and expanding markets for artisanal Canadian and Mexican cheese in the US.
